I’ve spent nearly a decade working in IT, building a career around structure, precision, and problem-solving. But outside of that world, I’ve always found myself in the kitchen. Cooking and baking have always been more than just hobbies for me — they’re how I create, unwind, and express myself. For the Wrap:
Large tortilla

Ingredients:
3/4 cup neutral oil
4 Medium tomatoes, thinly sliced
2 tbsp ginger paste
2 tbsp garlic paste
1 packet Shan Biryani seasoning (sifted, whole spices will be added for cooking the rice)
2 tsp coriander powder
1/2 tsp garam masala
1/2 tsp cumin powder
1 cube chicken bouillon
4 aloo bukhara (dried plum, be careful when eating this dish later because these still have the pits in them, which will be lost in the biryani after cooking)
1/2 cup dahi yogurt
2 russet potatoes, cubed
600ml water
2lbs chicken (I used drumsticks)
3 cups long grain basmati rice, washed and drained
1/4 tsp red food color (optional)
1/2 cup fresh coriander, chopped

Directions:
1. Sift the packet of biryani seasoning and add the whole spices to a spice bag, then place it in a pot of water on medium heat.
2. Add oil to a hot pot, then add and saute the tomatoes until wilted.
3. Add the ginger and garlic paste, saute for a minute, then add your seasonings. Mix for 30 seconds to allow the flavors to ‘wake up’.
4. Add the dry plums (remember these have pits in them), followed by the yogurt and incorporate into the mix.
5. Add the chicken and cook for about 10 minutes, then add the water, potatoes, then continue to cook on medium heat until the potatoes are fork tender.
6. Wash and drain the basmati rice, then add it to the pot of boiling water and cook for about 3-5 minutes, the rice should still be firm but break easily.
7. Add the optional food color and fresh coriander, mix, then top off with the rice.
8. Place a towel over the pot, add the lid, and something heavy to keep it all secure, and cook for about 25-30 minutes on the lowest heat setting.
9. Fluff the rice, mix, and enjoy!

Let’s make Neapolitan Pizza 🍕 Recipe below 👇🏽

Ingredients:
1kg type 0 flour (I use Nuvola Super)
650ml water
18g fine sea salt
1.5g instant yeast

Directions:
1. Add water (reserve about 30ml), yeast, and flour to your mixer, then mix on medium low speed for approximately 10 to 12 minutes, dough should not exceed 76 degrees Fahrenheit.
2. Before the last 2 minutes, add the salt and remaining water.
3. Store in fridge for 48hrs bulk fermentation.
4. Take the dough out, let it sit at room temperature for 15 minutes, then form into 300g dough balls (I find that 250-280g is not enough), and store in the fridge for another 24hrs.
5. While heating your @oonihq pizza oven, let the dough come to room temperature before baking.
6. Stretch the dough (let me know if you would like a tutorial) and add your topping.

If you’re looking for an eggless tiramisu recipe, this one’s for you! This eggless tiramisu recipe captures all the flavors of traditional tiramisu but without the inclusion of raw eggs.

Ingredients:
4 cups strong coffee (I used instant coffee)
2 cups heavy cream
8 oz mascarpone cheese, softened
1/2 cup sugar
1 tbsp strong coffee
1/2 tsp vanilla extract 44 lady fingers
Cocoa powder, as needed
13x9” pan

Directions:
1. Start by brewing strong coffee and let it cool down.
2. Add the mascarpone cheese, sugar, vanilla extract to a pot then mix well until everything is smooth and incorporated.
3. In a separate pot, mix heavy cream with 1 tbsp coffee then whip until you get stiff peaks.
4. Gently mix the cream mixture with the mascarpone mixture.
5. Add a generous dusting of cocoa powder to the pan, then quickly dip lady fingers into coffee and arrange in the pan. Add half the cream mixture, followed by another cocoa powder dusting, and repeat once more.
6. Cover and let chill in the fridge for at least 4 hours or overnight.

Ingredients:
1 lb ground beef (I used 80/20)
1 small onion, grated/drained
1/4 cup Dahi yogurt
Seasoning (1 tsp coriander, paprika, salt, 1/2 tsp cumin, and black pepper)
1 tbsp avocado oil
Tortilla wrap
Tomatoes
Parsley
Onions

Directions:
1. Grate your onion, drain its juices then combine it with the beef, yogurt, seasoning and marinade in the fridge for 30 minutes.
3. Preheat oven to 400f and using parchment paper, lay beef flat as seen in the video.
4. I recommend using a wire rack to bake to retain a juicy finished product, bake for 25-30 minutes (will depend on how thick it is when you flatten it out), assemble the wrap and enjoy!

Dubai chocolate brownies hits different this time of year 🍫 ⛄️

Ingredients:
1 box brownie mix
Swap water with milk and oil with butter (follow everything else per package instructions)
6oz kunafa dough (aka kataifi)
1/2 cup pistachio cream
1 tbsp sesame paste

For chocolate ganache:
4oz dark chocolate
8oz heavy cream
Melted pistachio cream (optional for design)

Directions:
1. Follow all ingredients and instructions of 1 box brownie mix (but use milk and butter instead of water and oil).
2. Chop the kunafa dough into tiny pieces, add a small amount of oil and butter to a hot pan, then toast until golden brown. Add pistachio cream and sesame paste, then mix well.
3. Once the brownies are cooked and still warm (not hot, but not completely cool either), add your kunafa filling and spread evenly.
4. Heat the heavy cream (but do not boil) and add to the chocolate to melt it and make the ganache, then spread evenly.
5. Cover and refrigerate for 2 hours before enjoying. Keep leftovers in fridge.

By far one of the best smash burgers I’ve ever had 🍔 Grinding your own ground beef takes these smash burgers to a whole new level too 🔥

2 lbs 80/20 ground beef (80% meat / 20% fat)

This is by far the BEST crab dip I have ever made 🦀 I’ve made crab dip and experimented so many times with different ingredients, this by far was the most balanced recipe I created. Here’s how to make it:

8oz cooked lump crab meat
8oz cream cheese, softened
1/2 cup mayonnaise
1/4 cup sour cream
1/2 cup shredded cheddar
1/2 cup shredded mozzarella
2 tbsp green onions, finely chopped
1 garlic clove, minced
1 tbsp old bay hot sauce
1 tsp Worcestershire sauce
Top it off with more cheese and a pinch of old bay seasoning. Bake at 400F for 25-30 minutes or until golden brown.

Let’s make corn salsa exactly like chipotle! And I’m talking about from back in the day when their corn had a nice char to it and didn’t come prepackaged in plastic bags. Scaled down recipe below 👇🏽

Ingredients:
4 ears of corn, husked 🌽
2 medium poblano peppers 🫑
1 medium red onion, finely diced 🧅
1/2 cup cilantro, finely chopped 🌿
1/4 cup citrus juice, 🍋‍🟩
2 tsp sea salt🧂
1-2 jalapeños, finely diced (seeds removed for less heat) 🌶️

Directions:
1️⃣ Char the corn and peppers by using your broiler or grill.
2️⃣ Place peppers in bowl and cover to sweat and make removing the skin easy.
3️⃣ While the corn and peppers cool, prepare all remaining ingredients and add to a bowl.
4️⃣ Use a knife to carefully separate the corn kernels, peel the skin off the peppers, remove the seeds and chop, then add to the bowl.
5️⃣ Mix everything well, taste and adjust the salt if needed (acid counteracts salt, so you’ll need plenty of it!). Let it chill in the fridge at least 30 minutes before serving, and enjoy! #cornsalsa #chipotle

Wet batter
- 1 cup pre drip mix
- 1.5 cups ice cold club soda
Dry batter
- 1 cup all purpose flour
- 2 tsp baking powder
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp salt (or to taste, the wet batter already has salt)
- 1 tsp crushed pepper
- 1 tsp paprika
- Oil for frying
Sauce
- 1 tbsp neutral oil
- 1 tbsp crushed peppers
- 1 tbsp garlic paste
- 2 tbsp Gochujang paste
- 1/5 cup low sodium soy sauce
- 1 tbsp rice wine vinegar
- 2 tbsp brown sugar
- 1 tsp sesame oil
- 2 tbsp honey
Garnish
- sesame seeds
- red chili
- green onion

- prepare the went and dry batter, coat the chicken then fry until fully cooked.
- while chicken is frying, add oil to hot wok, sauté crushed peppers for 30 seconds, then add garlic paste and sauté for 5 seconds, then add gochujang and incorporate quickly.
- add remaining sauce ingredients and reduce while stirring frequently.
- once sauce has reduced to your desired consistency, add cooked chicken and coat well.

1 lb Ground beef  1⁄3 Cup Beef broth 1⁄4 Cup Brown sugar 1⁄4 Cup Teriyaki sauce 3 Tbsp Soy sauce 1 Green onion stalk, minced 2 Tbsp Neutral oil 1 Tbsp Minced garlic 1 Tbsp corn starch 1 tsp red pepper flakes 1 tsp black pepper 1 tsp Sesame oil Green onion and sesame seeds for garnish  Desired amount of white rice

Directions:
1️⃣In preheated wok or non-stick skillet, add neutral oil, garlic, green onions, and crushed peppers, then sauté until fragrant.2️⃣Add in your ground beef and cook until brown in color, for about 5-7 minutes.3️⃣In a large bowl or measuring cup, add in your sugar, beef broth, teriyaki sauce, soy sauce, corn starch, red pepper flakes, black pepper, and sesame oil. Stir really well and make sure there are no clumps of corn starch.4️⃣Add the sauce mixture to the cooked meat and stir until dark in color and thick. You’ll know the sauce is thick enough when you scrape the pan, and it takes a second for everything to come back together.5️⃣Serve over white rice. Add your garnish and enjoy!

435g lukewarm water
36g neutral oil
14g sugar
14g salt
1.8g instant yeast

Directions:
1. Add all ingredients to a stand mixer except for the oil. Start mixing and once everything starts to get incorporated, slowly add the oil. 2. Cover and bulk ferment at room temperature for 2 hours. Divide into even dough balls, about 100g each, cover and let rest while heating your oven at 550f. 3.
